Bear Meat Lasagna Recipe Ingredients:
Sauce –
1 can whole tomatoes
1 can crushed tomatoes
1 can tomato puree
2 cans tomato sauce
1 can tomato paste
1 garlic clove, finely chopped
1 half small onion
1 teaspoon basil
2 tablespoons Italian seasoning (thyme , oregano, rosemary)
1 teaspoon sugar to take acid out of sauce (optional) or baking soda
1/4 cup red wine (optional)
mint leaves
pepper (optional)
Italian grated cheese (just a pinch)
– Lasagna
1 pound package sweet bear sausage (this is made half pork and half bear meat)
1 pound package hot bear sausage
*bear sausage is a blend of pork and bear meat seasoned and stuffed in casings
1 pound package hamburger meat (you can use bear hamburger)
2 pounds ricotta cheese (or cottage cheese)
2 tablespoons parsley
4 large eggs
2 boxes no-bake lasagna noodles
2 packages mozzarella cheese, shredded
Bear Meat Lasagna Recipe Directions:
Sauce –
Combine all ‘sauce’ ingredients in large pan and simmer on low heat for at least 6 hours.
Lasagna –
Take bear sausage meat out of casings and fry over medium heat until browned, add chopped onion and crushed garlic for flavoring; set aside.
Fry hamburger meat until browned; set aside.
In a large bowl mix 2 lbs of ricotta cheese, parsley and eggs – blend well; set aside.
In a large baking dish cover bottom of dish with sauce.
Lay noodles then sprinkle with meat.
Spoon ricotta cheese (about 4 large spoonfuls dropped in different areas)
Sprinkle with shredded mozzarella cheese.
Continue to layer (I layer one vertical then horizontal, just easier to dish out)
Top off with noodles, cover with sauce and cover with foil.
Bake in oven at 350°F for 1 hour.
